Ecco da dove ho tratto ispirazione. This is where I found inspiration and by tomorrow I am going to translate it for you, my dear dolls & guys!!!


INGREDIENTS FOR ORIGINAL FOCACCIA FROM PUGLIA:

8.81 oz of Farina type "0"
8.81 oz of semolina durum wheat (or wheat flour)
2 boiled potatoes (small and warm)
4 tablespoons extra virgin olive oil (for the dough)
1/2 cube of yeast
300-350 ml of warm water
2 teaspoons salt
1 teaspoon of sugar
As for the dressing of Bari focaccia, you have to take into account the following information:

4 -5 tablespoons of oil (about) 50 ml of water
10 cherry tomatoes (about) 10 green olives Baresane (about) oregano q.s.

Salt to taste.

PROCEDURE FOR FOCACCIA BARESE:

1) Let's take a look to what is the procedure for proper preparation of Bari focaccia:
First of all, you need to boil the potatoes, then proceed to peel, mash and mix them together with two sifted flour in a large bowl, finally add the yeast.


2)The latter, before being added, it must have been dissolved with sugar in 100 ml of warm water (300-350 ml obtained from above). It is important to gradually add water, and finally, oil and salt: it is important to obtain a homogeneous mixture, elastic and soft.

3) Once this has been achieved, the mixture can be placed in a bowl, covered with plastic wrap, and put in a warm place so that it can rise to at least double in volume, after which, it will be important to worry about placing it on a baking sheet 35-40 centimeters in diameter, which has previously been greased with olive oil.

4) Grease with some oil, proceed with the drafting of the cake in the pan, and then distribute on the same olives over the tomatoes - previously chop in half - making sure to leave the tomatoes with peel up, then, cover the focaccia with a damp cloth, and then place it inside the oven off, allow to rise for at least a quarter of an hour.

Meanwhile prepare an emulsion, beating with the help of a fork, water, oil, a pinch of salt and pour it on the cake, and then proceed to sprinkle the oregano, then bake it all in oven at 392 F for about 30 minutes.

Once out of the oven, wrap the pan with a damp cloth and let the cake cool before serving.
